Aspiring and inspiring – careers in hospitality

Terry Higgins heads up the Rockpool Consulting team for Qantas – overseeing every little thing from start to finish, with the eagle eye of a woman who has years as a Rockpool Restaurant Manager under her belt. She’s the ‘go-to’woman’ in the Rockpool group when we are doing service training 101. If it doesn’t pass Terry, it simply doesn’t pass. Today she writes of a couple of recent situations that inspired her and that bring home just why it is we do what we do in hospitality. Take it away Terry…

Last week’s visit to Rockpool on George by a school from Kempsey reminded me of the interest there now is in hospitality and what a great profession it truly is, especially if you have a passion for food and wine.

Rockpool on George

The group came to talk to Phil Wood, Head Chef of Rockpool on George about becoming a chef and about his career. I also spoke about a career in the front of house – waitering,  sommelier wine service and service that ties the whole experience together. This two day excursion around Sydney’s finest restaurants and hotels was to inspire the students to look at our industry as a possibility for their future employment. 

In Canberra last month, working a Qantas and Ministers dinner at Parliament House I had the pleasure of working with two such aspiring and inspiring staff who work at Parliament House Catering - part of Intercontinental Hotels Group. It reminded me why I love this job. Working with me on the floor was Shannen Pruss, a young girl with a real passion for service.  Passionate to learn and dedicated to looking after her guests to the best of her ability. Her ambition is in events and I am sure she will be fantastic at it.

Parliament House Catering with Neil Perry

In the kitchen, 4th year apprentice Brett Waslin soaked up every word from Rockpool Bar and Grill chefs Angel and Santigo. In the morning prior to our chefs arrival, I heard that Brett couldn’t believe that he would be seeing Neil Perry in action. Little did he know he would be right in the middle of it, helping to plate up right next to him!! That’s Brett above in the white cap…

We talked at the end of the night about them both doing work experience in our restaurants. I really hope they take us up on this offer and look to work along side us in the future.
